Sweet & Sour Turkey

Ingredients

  • 2 T. cornstarch
  • 1/2 c. brown sugar
  • 1 c. turkey broth
  • 1/3 c. cider vinegar
  • 1/4 c. soy sauce
  • 1/4 c. ketchup
  • 2 T. oil
  • 3/4 c. pineapple chunks
  • 3/4 c. sliced raw carrots
  • 3/4 c. chunked green peppers
  • 4 c. turkey, cubed (fillets work well)

Directions

  1. In a small pan, combine cornstarch and brown sugar.
  2. Add broth, vinegar, soy sauce and ketchup.
  3. Cook and stir until thick, set aside.
  4. In a hot skillet, stir fry carrots and green peppers in oil until tender.
  5. Add pineapple and turkey.
  6. Heat through and add sweet and sour mixture.
  7. Serve over hot rice. Yields 7-9 serving.
